Pedal Portugal 
Looking forward to this in Autumn! I live in Mérida, Extremadura so this is easily accessible for me. Extremadura, btw, is another great place to go cycling if you know the back routes!
Hope you enjoy it. I’ve done some riding and exploring in Extremadura too but don’t know it as well.

Not long back from Portugal, a lot of similarly busy roads with occasional traffic sometimes. May be the kick up the bahookie to write it up.
